Tomorrow is the official start of
summer, but we're already seeing a bounty of local produce. Here's
what we're featuring this week:

with tender long stems that can be cooked in a variety of ways.

roasted, sautéed, grilled, baked, or eaten raw. Their petite size
brings out a natural sweetness as well.

Beautiful large heads with a mild, slightly bitter flavor that can
be grilled, sautéed, braised, added to pasta, or eaten fresh in
salads.

Red Beets with Greens
From Epiphany Farms in Bloomington, IL
Beets can be roasted, boiled, steamed, or eaten raw. The greens are
edible too and can be cooked like spinach or added to salads.

Red Romaine Lettuce
From Windmill Acres in Beecher, IL
Known for its long, crinkled leaves that transition from green to
reddish-purple as it matures. Red Romaine is prized for its crisp
texture and is a popular choice for salads.

Green Cabbage

These spring grown small heads have a fresher and sweeter flavor
than their winter counterparts.

Mixed Lettuce Heads
From The Talking Farm in Skokie, IL
A variety of tender lettuce heads grown 3 miles from Wild Onion by
volunteers with a passion for urban agriculture.

or eaten raw in salads or wraps.
