We're also kicking off one of our favorite seasonal traditions: The Chopping Block's cooking demos return this Thursday! Speaking of The Chopping Block, on Thursday, June 11, they'll be hosting a special farmers market class. Recipe Box: Rhubarb Beyond Pie

Rhubarb is one of the true stars of early market season. Its bright color and unmistakable tartness signal that spring has fully arrived but if your only experience with rhubarb is pie, you're missing out on just how versatile this seasonal favorite can be.

This week, we're celebrating rhubarb in all its forms: sweet, savory, and saved for later. Pickle it for a tangy addition to charcuterie boards and sandwiches, toss it into a crunchy slaw for a fresh spring side dish, or transform it into a vibrant syrup perfect for cocktails, mocktails, sparkling water, and desserts.

Whether you're preserving the harvest, experimenting with new flavors, or simply looking for a fresh way to enjoy a market staple, rhubarb is ready for the challenge.
